INGREDIENTS:
METHOD:
- 2 cups organic wholemeal spelt flour
- 4 tsps baking powder
- Pinch salt
- 2 tbsps 100% maple syrup
- 1 large egg
- ¼ cup + 1 tbsp melted coconut oil
- 1- 2 tsp vanilla extract
- 3 ripe pears finely chopped and sprinkled with cinnamon
- ½ tsp cinnamon and nutmeg (or to taste)
- ¼ - ½ cup water, as needed
- Roughly ¼ cup of chopped walnuts
- Roughly ¼ cup of chopped macadamias
METHOD:
- Combine flour, baking powder and salt in a bowl
- Mix in the egg, maple syrup, coconut oil and vanilla extract
- Stir through pears, cinnamon and nutmeg and fold in nuts
- Add water as needed
- Spoon the batter into paper lined muffin tin. Batter makes about 16-18.
- Bake at 160’C for about 25-35 min (depending on your oven), until inserted toothpick comes out clean
- Cool on a wire rack
