After a 10 hour day at College I’m exhausted and I don’t really feel like cooking nutritious food, but I know if I went for the takeaway option I’d end up feeling worse.
Again this is a low FODMAP recipe so feel free to actually add garlic and onion. Also I tend not too be too exact with measurements, these are just rough so you might need to play around with it a little bit.
INGREDIENTS:
- 1 chorizo sausage
- Prawns/seafood marinara mix (enough to feed the amount of people you want to serve)
- 1 packet of brown rice – if you weren’t in a rush preferably fresh/unpackaged is best
- 500mL (or a bit less) chicken stock
- 1 cup frozen peas/corn
- Capsicum
- 1 tsp turmeric (or to taste)
- ½ tsp paprika (or to taste)
- Garlic infused olive oil, as needed
- Pepper
METHOD:
- Cook the seafood in the oil and set aside
- Cook the chorizo (it should start to release its own oils)
- Add rice and stir through the turmeric, paprika and pepper
- Add the chicken stock making sure all the rice is covered
- Simmer until rice is nearly cooked, add the peas and corn and continue to simmer until it has absorbed all the fluid
- Stir through seafood and capsicum (I like it crunchy so I didn’t add it in earlier)
- Season to taste
And there you go, a nutritious dinner that’s easy to make even after a long day.
